Bake my Blueberry Muffins right now!
They’re easy, healthy & basically the most delicious thing you will ever enjoy (:1/4c Egg Whites
1/4c Olive Oil (or whichever type of oil you dig)
1/2c Almond Milk
1 1/2c Whole Wheat Flour
1/2c Sugar Substitute (I used splenda)
2t Baking Powder
1/2t Salt
1/4t Cinnamon
1/8t Nutmeg
1c Fresh or Frozen BlueberriesPreheat oven to 400 degrees. Mix together egg whites, oil and milk in small bowl and set aside. In a separate large bowl combine all dry ingredients then stir in blueberries. Make a well (hole) in the middle of the dry mix and pour in liquid mixture. Mix together with a fork until dry ingredients become moistened (25-30 strokes). Batter will be lumpy!
Line muffin tin with liners or spray with non stick cooking spray. Using an ice cream scooper, fill the cups in the muffin pan slightly more than half full. Bake 18-20 minutes or until golden brown on top and pass the toothpick test and enjoy!Mine baked 10 muffins at about 130 calories each
